Instructions
Chop 1 cup walnuts in food processor until well chopped but definitely not powdery; keep some texture to them. Set aside, mix in the cinnamon.
Put remainder of walnuts and other ingredients into food processor. Keep processing until it starts to form a wonderfully oily glob of a ball.
Hand roll this mixture into separate balls, about 20-25 of them. Roll the balls around in the chopped walnut mixture.
After above, roll the balls in the coconut flakes

Filling Instructions
Toss sliced apples with 2 tablespoons of lemon juice and set aside
Places chopped apples, dates, raisins, cinnamon, and remaining tablespoon of lemon juicier food processor fitted with "S" blade and process until smooth
Remove from food processor and mix with sliced apples
Crumble Topping Instructions
Place nuts, coconut, cinnamon, nutmeg, and salt in a food processor with "S" blade and process until coarsely ground
Add raisins and dates, and process until mixture resembles coarse crumbs and starts to stick together. Don't over-process
To assemble crisp, press 1/2 cup of crumbles topping into pie plate
Spread apple filling on top using a spatula
Using your hands, knead pieces of remaining 1 1/2 cups of crumble topping until they stick together
Lay these pieces of topping on apple filling to form a cobbled appearance, allowing some of filling to peek through
Chill at least 1 hour and serve at room temperature

Instructions
Crust:
blend in Cuisinart until well mixed but may not be totally smooth
cover the bottom of a pie man with dried, shredded coconut
press crust into pan and up sides (Optional: put in dehydrator at 105*F for 30 minutes)
place crust in refirgerator
Filling
blend until smooth in cusinart or blender.
pour into crust and place in refigerator and let sit overnight

Recipe Notes
1) Mix all the dry ingredients together in a large bowl.
2) Whisk together the maple syrup, water, coconut oil, cinnamon, nutmeg, and salt. Pour over dry ingredients and mix them well with your hands. If you’d like to make a sweeter granola, you can add another tbsp maple syrup, or a few drops of stevia; the amount listed is intended only to add gentle sweetness and to bind the granola together.
3) Dehydrate at 115 degrees for about 10-12 hours, or until granola is sticky but adhering firmly. Refrigerate till ready to use; this will help maintain crunch and texture!
