Instructions
  1. Cook quinoa on stove in 1 cup of water (1:2) (Note: you will probably need to add more water until quinoa is fluffy)
  2. Mash avocado in a mixing bowl.
  3. Stir in remaining ingredients and mash with fork until coarsely blended.
  4. Put quinoa on 2” square of purple cabbage
  5. Put guacamole on top of quinoa
  6. Sprinkle sprout on top.

Instructions
  1. Boil 4 cups of water with a pinch of salt
  2. When the water boils, turn off the stove and place the quinoa.
  3. Cover the pan and let it sit for 30 - 45 minutes (The grain will absorb the water)
  4. Cool it down (usually leave in refrigerator overnight)
  5. Mix all ingredients in a bowl.
