Eat to Thrive Gold nugget

Betsy’s class most importantly taught me that being organized, creating grocery lists, and having a meal plan SAVES time in the long run. I don’t need to reach for a protein bar of poor taste and quality. I know that I can use very few ingredients to create delicious food and good food makes an enormous difference on how I feel throughout the day. The workbook and youtube channel are chock-full of great recipes and ideas. Cooking is fun and having a system, a day to go shopping, and cook meals for the week is surprisingly an easy routine. I used to feel anxiety about having to bring in food for social functions. Since several people in the class have made these recipes, I know that they are delicious and do not require a big-time commitment. Thank you for showing me that I can make and eat healthy meals every day that will save me time and money!

The Eat to Thrive 10-week program provides support and motivation, as well as inspiring a passion for living a plant-based lifestyle. This program is lifechanging. It has changed my life and that of my husband. It is so empowering to know that there is a program that has the ability to control one’s journey in so many ways simply by making the right choices. A big thank you to all the speakers for sharing their insight and light. Tom Lindsley, Joe Lucier and Jonathan Fang really made an impact. The action steps they suggested have been so helpful to me in achieving my goals. Betsy, thank you for being an amazing teacher, facilitator, mentor, and Zoom Host. I feel so blessed to have this opportunity to learn and grow with you and my new friends. A big thank you to River Hayes for her hard work and preparation as the technical assistant in making our 10-week program a success.

I’ve had a total of 11 cardiac events in my life. I literally was on the cusp of death. I changed to a plant-based diet through the Eat to Thrive method and I’ve seen astounding results. I haven’t had a heart attack in 3 years and Im trying to make sure more people can live as healthily as I am and I want them to play golf with me four times a week.
